I think number three has to do with positioning and branding. So my question is how do you avoid letting your focus on the ideal customer cloud your judgment when someone you didn't expect walks through your door and wants to buy from you?

My point is that many businesses start out with an ideal customer and build their marketing, product or service around that person. I think you've answered the question anyway though. It's important to be paying attention and constantly doing reality checks in order to figure out who your customers really are, though, so that you can make course corrections when needed.

Thanks for your comment. Not sure I fully understand your question. If someone walks into your establishment, whether ideal or not, treat him like a king, anticipate that it could be the best purchase of the day and you may be surprised, it just might be. You never know from where your best sales and future customers come. In today's society, we are situationally based and Americans are particularly protean creatures, so just because we "look" one way, our behavior in that moment might be something totally different.
