I'm always so surprised when employers don't ask a candidate to give them a writing sample right then and there. Give them a topic, maybe 10-15 minutes, and see what they come up with.
Granted, it may not be perfect with the limited time you give them, but it'll give you a much better idea of whether or not this writer will be a good fit for your brand, clients, etc.
