Susan: OK! I want to commemorate the historical day, December 16, 1773, with publishing my book on tea on December 16, 2014! :)

Susan: I am pretty fast on the keyboard, but a slow starter! ;) My book on tea will not be a long book, I am shooting for about 100 pages (10 chapter or so), with some illustrations and photos. I want it to be in a handy dandy format, so you could read it during your tea "ceremony" and travel.

I will start on May 1st. Will I be able to publish it on December 16? ;)

Susan: Thanks for your advice! I got the great advice to write down my answers to questions that my future could have. And the start to group them into sections / chapters.

What could be a manageable word count be per day?

That's up to you. How fast do you write? Aim for 1,000 words and see how easy or not that is.

I'd suggest breaking down your book into smaller, more manageable tasks, like chapters, or even number of words. Don't look at the whole thing or it'll overwhelm you.
